A Raw Vegan Birthday

Throughout this yoga retreat, I have made connections with several incredible people, and one in particular has found a very special place in my heart.  Seeing that I am currently living in a little cottage with no kitchen, you won’t be surprised to hear I was a little stumped when I found out it was her birthday!  I couldn’t let her spend her day without a sweet treat, so I gathered a few simple ingredients and got to experimenting.  I didn’t have a blender or many kitchen utensils, so I had to make do with what I had.  Luckily, I was able to make her a low fat raw vegan cake in no time… and the result was delicious to say the least!

The crust is made with 1 part walnuts to 2 parts dates and raisins and a spoonful of raw cacao. Crush the walnuts by hand, and cut the raisins and dates into small pieces. Then knead them together until a doughy consistency is formed. Press into desired shape and refrigerate to set.

Begin slicing desired fruit and piling it on top of the crust. I put some chocolate frosting as a base for the fruit.

Keep adding thinly sliced fruit. Mangoes and bananas are super sweet together.
The chocolate sauce is low fat, made with raw cacao, honey, coconut milk and chia seeds (to thicken).  Mix the ingredients together and refrigerate to set.

Decorate the cake as you'd like, and voila! Enjoy a guilt free, delicious dessert!
